INGREDIENTS
1 cup dried penne pasta
1 medium aubergine/eggplant
2 medium zucchini
1 yellow zucchini
1 fennel
2 bell peppers
1/4 cup Sundried tomatoes
1/4 cup olives
1/4 cup chopped basil
1/4 cup arugula
Marinade
1 tbsp olive oil
1 tsp paprika
1/2 tsp dried oregano
1/2 tsp dried Basil
1/2 tsp dried parsley
1/2 tsp salt
Dressing
1/4 cup olive oil
1/4 cup lemon juice
1/2 tbsp English mustard
1/2 tbsp dried oregano
1/2 tbsp dried basil
1/2 tbsp dried parsley
1/2 tsp salt
2 tbsp vegan mayo
1 tbsp agave
1/4 tsp black pepper
METHOD
– Chop up your veggies and toss them into the marinade
– Place onto a baking tray lined with parchment paper and bake at 425F for 20 minutes till perfectly cooked and golden
– boil your pasta drizzle with olive oil to keep separate once cooked
– Add all dressing ingredients into a jar and shake
– Add all components into a mixing bowl and pour over the dressing
