In spice bag: 1/2 tsp peppercorns, crushed 3 juniper berries, crushed 2 bay leaves, optionally put directly into pot In a bowl, mix: 50g white miso 4 Tbsp corn starch 4 tsp fish sauce 200ml cream Add into the soup once the ingredients are a slurry. Suggestion for next soup season: colombian ajiaco with rice, avocado, heavy cream and capers? It's a national classic, warming many a heart, even in the caribbean where they don't need warming… Hope you check it out!
here's some anecdotal evidence to your claim
i don't really like fish, except for whitefish and salmon.
i think salmon filet and cod "kibbeling" are awesome.
tuna is the furthest i can go in terms of fish, i can eat it, but i don't really enjoy as much it at that point.
I recall my time at Murmansk, the ukha fish soup they served in some cottages also looked somewhat similar to this with salmon & a bit of cream. But given how close Murmansk is to Finland & Norway, there could be a cultural exchange took place between them.

Miso and fish sauce? Why not fish stock from the cube? Basically, butter and cream are all you need for the Finnish fish soup. However, your take looks delicious. Greetings from Finland.

I've got 500ml of good fish stock, would it be better to sub this in with the starting water, ie 500ml of stock, 1l of water? And if so, since it will be diluted, should I use less miso/fish sauce for the cream or none at all?

tested that one tonight, was really tasty, creamy, thick & yummy 😋 didn't add the dill & juniper though (we're really not that fond of both). reminds me of my trip to finland (and yeah, karjala was part of the trip) 😉

This looks like salmon chowder!! My grandmother always said chowder should have potatoes in it. Her father was from Sweden (pretty close to Finland). Ahhhh Her corn chowder was so goooood, sweet and savory, not thick at all, creamy and so good!! thank you for this video!!
Ok. So…I made this. And it was AMAZING! So, crazy good! This is now one of my favorite soups ever! Thank you for introducing me. I thought the fishy flavors were going to be weird. But tthey really added so much to the dish! And it didn't take as long as I had expected either.

I always make a very similar soup inspired by a Norwegian friend of mine. I always use "hondashi" (japanese fish stock powder) as base and it works beautifully.
