Always taste your batter/dough before baking…and ‘back’ the sweetness with liquid stevia…drop by drop…until you achieve the sweetness that you desire.
Strawberry whipped cream cake is what I asked for every birthday! 2 layers white cake Strawberry center and then topped with whole strawberries and the whipped cream topping! We need a good vanilla white mug cake and top with strawberries. Whipped cream is keto. If you want to up the flavor use whipped heavy cream vanilla sweetener and marscarpone cheese as the topping.
You can make a strawberry poke cake w sf strawberry jello for more strawberry flavor. Thanks for your experiments!🫶❤️

For perfectly soft and creamy cream cheese, place in a bowl of hot water for a few minutes…perfectly smooth without accidentally over-cooking in the microwave

Pumpkin Mousse- 1 Tbs melted butter, 1/2 tsp baking powder, 1 Tbs coconut flour, 1 Tbs almond flour. 1/4 cup unsweetened canned pumpkin, 1 egg, 1 Tbs monkfruit or other sweetener, 2 Tbs cream or 1/2 & 1/2. Mix everything in the mug. 1-1/2 to 2 minutes depending on microwave power.
Chocolate Cake: 1 Tbs melted butter, 1 Tbs almond flour, 1 Tbs coconut flour, 1/2 tsp baking powder, 2 Tbs cocoa powder (unsweetened), 1 Tbs monkfruit or other sweetener , 2 Tbs cream or 1/2 & 1/2, 1 egg. Mix everything right in the mug. 1-1/2 to 2 minutes depending on microwave strength.
Big Man’s World has a lot of good recipes. I make his Bun recipe all the time. Funny thing is: mine turn out nothing like his, not even close! But they work for me. I use them for sandwiches and they are SO good. You can taste the mozzarella but that’s good on a sandwich – it tastes like you’re eating a type of bread. Love it, even if they’re not made properly by yours truly!

Fresh strawberries might have less humidity than frozen. That may have been the culprit.
