WELCOME BACK FRIENDS! IN THIS VIDEO I SHOW YOU WHAT I EAT TO LOSE WEIGHT. I’VE LOST 96 LBS ON KETO AND STILL ON MY WEIGHT LOSS JOURNEY BY EATING AND MAKING DELICIOUS MEALS SUCH AS THIS DELICIOUS CREAMY TUSCAN CHICKEN!

Creamy Tuscan Chicken Recipe:

– 2 tbsp avocado oil
– 2 1/2 Boneless Chicken Thighs
– 3 Garlic cloves, minced
– 1/2 tsp paprika
– 1/2 tsp Italian seasonings
-1/2 cup chicken broth
– 1 1/4 cup heavy whipping cream
– 1/3 cup Gouda cheese
– 1/2 cup Parmesan cheese (leave about 1/4 cup for garnish)
– 1 cup grape tomatoes sliced in half
– 1 1/2 cup fresh baby spinach leaves
– 1/4 onion, diced

Instructions:

1. Season chicken with Italian seasoning, paprika, salt and pepper.
2. In a skillet over medium heat, add 2tbsp avocado oil.
3. When skillet is hot, add your chicken and sear on both sides until brown. Cover with lid to cook chicken till food thermometer reads 165 degrees, don’t over cook. Remove from pan and let rest.
4. Add butter, onion, tomatoes and garlic to pan with Italian seasoning and paprika, stir on medium/low heat for 5 minutes.
5. Add chicken broth to de-glaze the pan, making sure to scrape the pan to remove the bits of goodness left behind from the chicken.
6. Add heavy whipping cream, Parmesan cheese, Gouda and spinach and simmer on medium heat until your sauce starts to thicken. Stir occasionally so it doesn’t stick to the pan (approximately 5-8 minutes)
7. Add chicken back to the skillet and let it simmer for two minutes on low heat.
Add remaining 1/4 Parmesan cheese to top it off.

I have served this over cauliflower risotto and have also used low carb pasta.
