Smashed Dill Toast (2 servings)
230g chickpeas, drained
1/4 red onion
3 tbsp hummus
2 tbsp plant milk, unsweetened
2 tbsp lemon juice
1 tsp dried dill
1 tsp maple syrup
1/4 tsp salt

Coriander Dressing
1/2 cup cashews (boil 5 min then drain)
1 tbsp nutritional yeast
1 handful fresh coriander
1/4 tsp garlic powder
1/8 tsp salt
1 tbsp lime juice
1/4 cup water

Creamy Pesto Pasta (4 servings)
4 tbsp dry roasted pine nuts (or sunflower seeds)
230g cannellini or white beans, drained
1/2 cup plant milk, unsweetened
2 tbsp nutritional yeast
2 tbsp lemon juice
1 cup fresh basil
1 garlic clove
1 tsp salt
1 tsp onion powder
300g dry whole wheat pasta

Mushroom Hamburger Patties (4 servings)
1/2 yellow onion
1 garlic clove
230g chickpeas, drained
1 cup rolled oats
100g mushrooms
2 tbsp hempseeds
2 tbsp tamari
1 tsp dried parsley
1 tbsp almond butter or peanut
1 tsp cumin, ground
1/2 tsp salt
1/2 tsp black pepper, ground
Oven: 35 minutes on 180C/360F

Ranch Dressing
1/2 cup cashews (boil 5 min then drain)
1/3 cup plant milk, unsweetened
2 tbsp nutritional yeast
1 tbsp lemon juice
1/2 tbsp maple
1 tsp dried parsley
1/4 tsp salt
1 1/2 tbsp fresh chives (to mix in with a spoon)

    Can I ask which model Vitamix you have? Mine is almost 10years old and doesn’t cope making nut butter. Yours seems to do it effortlessly.

  2. Thank you for all the tips – I'm going vegan now and your videos are so helpful! One thing is tho' in some of your videos the peanut butter you use has palm oil and sugar in it and I gave up those types of peanut butter long ago because palm oil is not healthy and destroys the rainforest and who wants added sugar and saturated fat so I have found peanut butter brands that have only one ingredient – just peanuts as it should be (and they aren't that hard to stir in the oil). So many organic companies are compromising to to add fillers to make more money off of us and contribute to ill health of our bodies and the planet. Only-one-ingredient nut butters can be found at most stores. I just noticed and thought I would give a feedback – not trying to criticize because your videos are just the most wonderful uplifting inspiration – just sharing info. 😉
