1:53 Sunday – Tom-Kha Soup! This is the recipe I followed
3:55 Monday – Minestrone! I used bone broth and skipped the beans

15:39 Wednesday – Cajun Shrimp and Fried Plantains * recipe below
20:33 Thursday – Cappellini & Grassfed beef pasta!

Curry Chicken Stir Fry
curry powder:
chop 2 bell pepper, 1 sweet onion and cook over medium heat for about 10-15 mins. cook chicken: sear on high heat for 2 mins each side. lower heat to lowest setting and cover with lid for 10 mins. turn off heat and let finish cooking for 10 mins. add chicken, chopped dates, curry powder, turmeric, ginger, a sprinkle of coconut sugar, salt, pepper, and just under a can of coconut milk. top with fresh cilantro and serve over coconut milk rice!
coconut milk rice: 1 cup rice, 1/4 cup bone broth, 3/4 cup coconut milk, pinch of salt + maple syrup. bring to a boil then add rice and cover and cook on low for 15 mins. wait 10 mins before removing lid.

Cajun Shrimp and Fried Plantains
fry plantains in coconut oil for 3-4 mins each side – SO easy! pat shrimp dry and season with paprika, garlic, oregano, cumin, and chili powder, salt + pepper and fry in ghee for 2 mins each side or until done. roast veggies, bell pepper & zucchini, in oven for 20 mins at 425 F in MCT oil with salt!

One small tip when you are making minestrone soup…if you ever have a “rind” from a chunk of fresh Parmesan cheese, cut it off the cheese and throw a piece into your soup while it , it’s adds that umami flavour. I save my cheese rinds in the freezer just for minestrone. 😋 it doesn’t melt it just adds flavour.
