STRAWBERRY KALE SALAD:
(What you need) *eyeballed all amounts*
Salad mix
Chicken, shredded
Strawberry, diced
Cucumber, diced
Avocado, diced
Balsamic dressing
Feta, crumbled

(What to do)
Toss together ingredients and enjoy!

CRUNCHY THAI PEANUT & QUINOA SALAD:
(What you need – salad) *eyeballed all amounts*
Quinoa
Cabbage, shredded
Carrot, peeled into strips
Cucumber, diced
Bell peppers, diced
Green onions, diced
Chicken, shredded
Crushed peanuts, for garnish
Lime slices, for garnish

(What you need – dressing)
1/4 cup peanut butter
1/4 cup soy sauce
2 tbsp honey, melted
1 tbsp rice vinegar
1 tsp minced ginger
1 lime’s worth of juice

(What to do)
1-In a large bowl, toss together quinoa, cabbage, carrot, cucumber, bell peppers, green onions, and chicken.

2-Blend together dressing ingredients.

3-Pour dressing over salad mixture, toss, then portion and garnish with peanuts and lime. Enjoy!
