Apple Butter Breakfast Bars
Makes 9 Bars

2 cups old fashioned oats
1 cup raw almonds or pecans
1/2 tsp ground cinnamon
1/2 tsp kosher salt (I use Morton’s which is saltier than some so add more salt to taste as needed)
1/4 tsp ground allspice
1 pinch ground cloves
1/3 cup melted refined coconut oil
1/4 cup maple syrup (1/3 cup for sweeter bars)
1 1/4 cup apple butter

Directions:
Preheat the oven to 375 degrees and then combine the oats and almonds in a food processor. Pulse into flour. Then transfer the flour to a large mixing bowl and add the cinnamon, salt, allspice and cloves. Mix well and then add the coconut oil and maple syrup.

Reserve 1/2 cup and transfer the remaining mixture to a lined 9×9 square pan. Press firmly to create a crust (Pressing down with a sturdy glass down works well.) Then evenly dollop the the apple butter all over the crust and carefully spread it into a thick, even layer.

Sprinkle the reserved oat mixture on top and bake for 25-30 minutes. Cool completely and then slice into bars 🙂
