What I eat in a day as a healthy plant-based vegan who LOVES to eat well but also no interest in bland, boring, or time consuming food. If you can relate, these easy recipes are for you! ✰ Beet Hummus Recipe:
1 can white beans, rinsed and drained
2 medium steamed beets
2.5 tbsp tahini
1 tbsp extra virgin olive oil
4 tbsp water
2.5 tbsp lemon juice
3/4 tsp garlic granules
1/2 tsp cumin
1/2 tsp kosher salt (I use Morton’s)
1/4 tsp black pepper

Combine all of the ingredients in a blender and blend until very smooth. Add more salt and lemon to taste as needed and enjoy!

  1. I love beets, cumin not so much but I still might try this humus, I love the beet and lemon one I get from the store. But that fish sandwich! One of the things I miss…will look for that brand. I've made picked celery before but never thought to put it on a sandwich…yum! Thanks again for a lovely interlude in the day.

  2. Before I decided to go vegan, I loved fish sandwiches. Now, I love fake fish sandwiches! Coincidentally, I was eating one as I watched this video. I usually get the Gardein brand. The thing that I am excited about is that I can put fresh sliced tomato on it. When I ate real fish, the tomato tasted metallic with the fish so I always left it off. I haven't tried beet hummus yet so glad to see you liked it! I leave the traditional addition of olive oil out of my homemade hummus. It's lighter and fluffier that way, not so dense. I use a bit of cold water instead. Thoroughly enjoyed the video, as always!

  3. I always wish there was a Veggie Grill near me. I don’t think there’s even one in the entire Northeast, as far as I know. I want to see the new Downton Abbey movie, but I hope it hasn’t become too woke. That always seems to be the case now. (I actually visited Highclere Castle in 2012. That’s how big a fan I was.)

  4. It has been over two years since I made the decision to "go plant based," and I'm still figuring out exactly what that'll look like long term. I have read, watched, listened to SO much in the last few years, and it is overwhelming! There is so much negativity out there, even from people who have the best of intentions. You always keep things positive! You are amazing, and your content is the most inspirational thing on social media. I can always count on you to offer delicious (and realistic) food, a relaxed vibe, and an all around positive experience. I look forward to learning something new from you every weekend.
