In this vlog I’m sharing some of what I ate this week as a healthy, plant based vegan. One day I made a Deliciously Ella inspired carrot soup, another day I made the BEST Restaurant Style Kale Salad, and I also made a short cut version of my Vegan Baked Ziti recipe. I went grocery shopping and did a grocery haul and there’s some fun dairy free ice cream taste tests in this video too! I hope this What I Eat video gives you some good meal ideas! Vegan Baked Ziti:

Restaurant Style Kale Salad
Serves 2 as a meal or 4 as a side
1/3 cup extra virgin olive oil
2 tbsp apple cider vinegar
1 tbsp fresh lemon juice
1.5 tsp Dijon mustard
1 tbsp maple syrup
big pinch of black pepper
1/4 finely diced red onion or shallot
1/2 garlic clove, grated
2 bunches kale, destemmed and chopped
1 tbsp fresh lemon juice
6 Brussel Sprouts, finely shredded
1/3 cup shaved vegan parmesan, I used VioLife
2-3 tbsp toasted pine nuts
Top with black pepper and fresh lemon zest

  1. I love my Native Deodorant, too! Is it just me or does the vanilla scent kind of smell like the freshly blow dried hair at a hair salon? Just me? Well, I love it!
    And Kanzi (Nicoter) apples are my favourite!!!
    Just put WASA "Knäckebrot" on my shopping list because I never tried it with a sweet topping!!!!? What is my life?????

  2. Hi, I make Pumfu a lot. My meat eating husband likes it. But I don’t eat too much of it because it’s very high in fat. I dab it with paper towel, cut into squares, toss with soy or coconut aminos, sprinkle with onion and garlic powder, 2 T nutritional yeast, and 1T arrowroot powder. Bake in 375 oven turn after 15 min. Return to oven until crisp to your liking. YUM. make tofu this way too 😀
