VERY BEST LENTIL SOUP | vegetarian one-pot lentil soup recipe

Lentil soup is a classic vegetarian soup recipe. It’s hearty, healthy, delightfully filling (with plant-based protein), and warming on those cold, wintery days. While there are many variations of lentil soup, you can’t go wrong with a simple, Mediterranean version.

I always love an easy, one-pot soup recipe like this as it’s easy to meal prep and reheat. It’s perfect for lunch or dinner and it’s naturally gluten-free, vegan, and dairy-free, making it perfect for almost all your guests!

  1. I'm most certainly making this tonight! Such great timing because I had no clue what I wanted to prep for meals next week.

I'll tell you what works everytime for me when cutting onions…. lighting a candle! I always light one and place it next to the cutting board. Voila! No tears!

  2. I had to stop the video before I forget so I could share with you my almost no tears cutting onion tip. I have tried everything like you and still nothing worked. I did go as far as trying the goggles. The last tip I've tried works almost like a charm. You will need a tall container the length of your knife with cold water. So worth the continuous going back into dip the knife. I hope this tip works as well for you as it does for me. Good luck. Now back to the video👌😉
