  1. Grinding for Bonda or Vadai in a Mixie changes the properties of the Batter. It is because the Stainless Steel spindle which holds the blades gets directly connected to the motor which runs at a high speed. At that speed the motor generates enormous heat which transforms to the food. The artificial instant heat changes the pattern of the food particles. So the quality changes. For example a Coconut Chutney ground in a Mixie & Ammi will have a drastic taste difference. Acceptable near quality is from Wet Grinder which has slow speed motor and the vessel is driven by a pulley & belt.
So guys think before you use a gadget in Indian Cooking if you wish to get authentic traditional healthy taste.

  2. HEALTH BENEFITS OF PERUMKAYAM – ASAFOETIDA
Hing being rich in fiber aids in digestion. It provides relief from stomach problems like gastritis, bloating, abdominal pain, flatulence and promotes overall digestive health. Due to its anti-microbial properties, it prevents growth of flora in the intestines and reduces the chance of stomach infection.

Asafoetida is used for breathing problems including ongoing (chronic) bronchitis, H1N1 "swine" flu, and asthma. It is also used for digestion problems including intestinal gas, upset stomach, irritable bowel syndrome (IBS), and irritable colon.

  3. HEALTH BENEFITS OF GROUND NUT OIL & OTHER VERY BEST COOKING MEDIUMS FOR INDIAN FOODS.

    GROUND NUT OIL

Groundnut oil is high in monounsaturated "good" fat and low in saturated "bad" fat, which is believed to help prevent heart disease and lower cholesterol. Most studies suggest that groundnut oil helps to reduce fatty build up in blood vessels.
Ayurveda recommends Ghee, Butter, Coconut Oil etc for cooking. These can be heated to high temperature and don't disintegrate into harmful substances on heating. Other oils that are part of traditional Indian culture are Groundnut (Peanut) and SESAME OIL (Nal'ennai)
