The family and I have been exploring new vegan and vegetarian recipes lately, and i wanted to share them with you all!
So here we go,

This recipe came from this book ( but of course with my own twist):

Ingredients needed:
CILANTRO CREAM
3/4 cup sour cream (I used plant based)
1/4 cup whole milk (I used oat milk)
1 tbsp minced fresh cilantro
1/2 tsp lime zest + 1 tbsp lime juice
salt & pepper to taste

SOUP
8 red bell peppers
1 tbsp x-virgin olive oil
2 garlic cloves, minced
1 red onion, chopped
1/2 teaspoon ground cumin
1/2 teaspoon smoke paprika
2 tbsp all-purpose flour ( I used barley flour)
2 tbsp tomato paste
4 cups veggie broth
1 bay leaf
1/2 cup half-and-half (used silk oat milk creamer 🙂 )
2 tbsp dry sherry ( did not use, my daughter was eating this lol)
2 tbsp minced fresh cilantro
Salt
pepper

There you have it!
