Vegetarian Polish Tomato Soup l Zupa Pomidorowa

My husband is half Polish so this soup is a staple in our household. Creamy tomato soup that is served with pasta or rice. It is a very Eastern European recipe and every family has a recipe of their own. Don’t forget to make grilled cheese sandwich as the experience wouldn’t be complete without it 🙂

INGREDIENTS
– 1 TBSP OLIVE OIL

– 1 SMALL CARROT, DICED

– 1/2 ONION, DICED

– 2 STALKS CELERY, CUT INTO TWO INCH PIECES

– 1 SMALL CAN DICED TOMATOES

– 14 OZ CAN DICED TOMATOES

– 3 CUPS VEGETABLE BROTH

– 2 CLOVES GARLIC, MINCED

– SMALL BUNCH OF PARSLEY
– 1/4 CUP SOUR CREAM OR GREEK YOGURT

– SALT AND PEPPER TO TASTE

– BOILED WHITE RICE OR PASTA FOR SERVING
