Black Eyed Peas (recipe in my digital cookbook)
Vegan Mac & Cheese (recipe in my digital cookbook. I made slight modifications when cooking this time by leaving out the vegan Gouda, breadcrumbs, and Italian seasoning. I added vegan Worcestershire sauce but it is not required)

Recipes not included in my digital cookbook:

Candied Yams
2-3 medium-sized sweet potatoes
1 – 2 tbsps of water
1/2 cup of brown sugar or brown sugar substitute
1/2 cup of white sugar or white sugar substitute
3/4 tsp cinnamon
1/4 tsp nutmeg
1-2 tbsp of vegan butter
1 tsp vanilla extract
Cook over medium heat for 30 – 40 minutes

Jackfruit Pot Roast
2 cans of jackfruit in brine/water, drained and rinsed
1/8 cup of steak sauce
1/8 cup of worsecetershire sauce
1/2 tsp liquid smoke
2 tsp onion powder
3 tsp Garlic powder
1 tsp thyme
1 tsp steak seasoning
1 tsp salt
1/2 tsp Black pepper
1 tbsp of garlic
3 bay leaves
2 cups of vegetable broth + 2 tsp corn starch
1 1/4 cup of carrots, cut into bite sized pieces
1 1/4 cup of celery, cut into bite sized pieces
1 medium-sized red potato, diced
1/2 yellow onion, sliced
Olive oil for cooking

There is a vegan cheese line called "Vivolife" they have a whole line of cheese including cream cheese. Please give it a try. I purchase mines at Whole Foods. It's best tasting line of vegan cheese on the market!
