Vegan Quesadilla Recipe


A quesadilla is a Mexican dish and type of taco, consisting of a tortilla that is filled primarily with cheese, and sometimes spices, and then cooked on a griddle. We are making Vegan Quesadilla with chickpeas, homemade queso dip, salad and it’s effortless and easy for a quick bite or even lunch boxes. This Vegan Quesadilla Recipe is so delicious, filling, easy and a perfect meal that you would want to prepare all the time.
Traditionally, a corn tortilla is used, but it can also be made with a flour tortilla, particularly in northern Mexico and the United States.
Simply cook the filling ingredients together in a pan, add them to your tortilla along with some vegan cheese, fold over the tortilla and wait for the cheese to melt. You can prepare this with any filling, feel free to switch this up to suit your tastes for your own quesadilla!

Cut them into little triangles and serve with vegan queso dip and salsa. These are great to have as party food or part of a Mexican feast with nachos, tacos or burritos.

Nutritional Yeast – 2 Tablespoons
Red Chili Powder – 1/3rd Teaspoon
Cumin Powder – 1 Teaspoon
Salt – 1 Teaspoon
Lemon Juice – 1 Lemon
Water as needed

Chickpeas – 300 Grams
Oil – 1 Tablespoon
Garlic – 4 Cloves
Onion – 1 Small
Green Chili – 1 Medium
Bell Pepper – Half
Hot Sauce – 4-5 Tablespoons
Salt – 1 Teaspoon
Cumin Powder – 1 and half teaspoon

Bell Pepper – 1/3rd
Onion – 1/3rd
Green Chilis – Half
Lemon Juice – 1 tablespoon
Salt as per taste
Black pepper Powder – half teaspoon
