This Plant Based Vegan Mexican Rice (also known as Spanish Rice) is so packed full of flavor you can use it as a side dish or eat it as a meal.   1. It wasn't even a week ago when I was wishing I had a good WFPB mexican rice recipe. I had a favorite one using oil that I make on the stove-top, but hadn't tried that recipe omitting the oil. Thank you so much. Can't wait to try this.

  2. You are the best whole plant food cooking show. I'm amazed you don't have double, triple, or quadruple views. I love your recipes, although I must say I usually make them easier by using frozen vegetables. I also have a tendency to just dump & cook instead of sauteing.

  3. I am making this today. Thinking I might add some beans when it finishes and put the lid back on for a few minutes to let them heat while the rice sits for a few.
    I also just ordered the magnets. I get so tired of having to look up cooking times. They are going to be a life saver.
