Vegan Lemon Blueberry Oats
I make these for breakfast and it keeps me satiated for long. Once you try it, you are going to get hooked too!
I am sharing a vegan version but feel free if you want to use cow milk and yogurt for the process.
For 2 servings:
1 cup rolled oats
1 cup milk( I have used almond milk)
3 tbsp Vegan Greek Yogurt
A pinch of salt
1/4 tsp lemon zest
1/4 tsp vanilla extract
1 tbsp lemon juice
2-3 tsp maple syrup
For the blueberry jam:
300 gm blueberries
Squeeze of lemon
2 tbsp chia seeds
Maple syrup as per sweetness desired
Make the oats by stirring everything together over low heat. If you are making overnight oats, you can do it off heat. You can also add in half a scoop of protein powder for that extra doze of protein but that is completely optional. Let it rest aside for 15 minutes.
Make the blueberries jam by adding blueberries,chia, lemon juice and maple over low heat. Squash the blueberries if needed with a masher and let it simmer for 5-10 minutes until the juice comes out. Let it cool down after turning off the heat.
Now make layers of oats and the jam as shown in the video above. Seal the container and let it chill in the fridge for an hour or overnight before eating.
