Made some noodles recently inspired by Korean japchae. You can see Eric and I were cooking together. I do most of the chopping/prep work and he steps in to season things. 😂 Anyone else have this dynamic with their partner?
Veggies: Onion, zucchini, carrot, red pepper, napa cabbage, garlic stir fried with salt and pepper.
Tofu: Extra firm tofu pan-fried till golden then seasoned with onion, garlic, white pepper, and soy sauce.
Noodles: Glass noodles tossed with soy sauce, toasted sesame oil, rice vinegar, vegetarian oyster sauce, chili paste, and scallions.
We find the glass noodles at Kroger in the International section and the veggie oyster sauce is mushroom-based and available at many Asian grocers or on Amazon.
