We’re back on the sauce this week with this incredible Indian curry sauce. This one is vegetable based so its a great way to increase how many hidden vegetables you can squeeze into your dinner. It yields more than enough for 2 days worth of dinners too! It’s really delicious and easy to make once you have your veg roasted! Let us know in the comments what you think.

The traditional way is to actually infuse the whole spices in the oil, not the ground versons, those are added later so as not to burn them. Just a thought!

Do grind up the almonds, can I just use coffee bean grinder? Or is that weaker than a smoothie blender (which isn't high-powered)?

AMAZING recipe! Such a great idea to blend roasted veges into the sauce. Follow the recipe on their website though, in the video he forgot to mention 2 Tbsps of ground almonds (or any nut). It really adds something this butter-chicken-like dish. Thanks dudes!
I feel like you guys are kings of curry! I love how easy this is, and you are absolutely right. Spices and herbs are so super cheap. Especially if you have a bulk store that you can bring in your own containers.

I recently discovered the glory of browning Brussels sprouts in the oven with a little oil and seasoning. I may need more roasted vegetables in my life indeed.
Made this today while I was also making vegan pad Thai sauce, and it was indeed epic! I was sticking my paws in it so much I needed to hire a security guard so there would be some left by dinnertime.
Where does the ground almonds go? In the video he doesn't show when to add it and in the written recipe just mention 'spices'.

If you don't have coconut milk, I think plain unsweetened soy yogurt can be used instead. If you don't like cilantro/coriander, you can just use other light fresh herbs like parsley, mint, basil, chives or diced green onions or white/yellow/red onions, fresh sweet bell peppers or even a squeeze of lime/lemon juice, apple cider vinegar, other vinegar if you have nothing else. I'll be making this beautiful recipe in the video tonight! <3

This looks wonderful ! Great idea to use the roasted veggies . Thinking about using light coconut milk, but also – can I freeze it? It would be great to have curry sauce ready to go in portions in the freezer.
