INGREDIENTS:
2 tbsp olive oil
2 cloves garlic
1/2 cup onion
3 cups broccoli florets
2 cups zucchini
2 cups spinach
2 cups kale
3 cups veggie broth
1/2 cup full fat coconut milk
garnish: dill + more coconut milk
How to:
In a soup pot, sauté onion and garlic until translucent. Add in broccoli and zucchini and sauté for a few minutes. Add the kale and spinach and veggie broth, then stir. Cover and simmer for 15. Add into blender or use immersion blender then add coconut milk! Blend until smooth. Serve garnished with dill and a little drizzle of coconut cream.
