INGREDIENTS
5 sweet onions (32 oz/908g)
2 tbsp vegan butter
2 tbsp oil
64 oz veggie stock
2 tsp apple cider vinegar
1 tsp balsamic vinegar2 bay leaves4-6 sprigs of fresh thyme
Salt and pepper to taste (around 1/4 tsp)
Sugar** optional 1 tsp if you like it sweeter6-9 slices bread1/2 cup grated vegan mozzarella (or more)1/4 cup vegan parmesan Follow Your Heart

Looks amazing 😋 but omg, save yourself the tears and cut if the roots first and get rid of them, that's where all the ouchy juice comes from
Very nice vegan spin on it! In my opinion, to make this even more yummy, I think we can caramelize the onions more so they get a little more brown and darker to get a more robust roasty comforting flavour, and also adding garlic with your onions (If you like garlic). And the bread (and again if you like garlic), rub them with a cut garlic clove to impart like a garlic-bread type vibe for another dimension of deliciousness. And everything else, I'd leave as is (I'd probably have a pepper mill beside me to top up on more flavorful "warmth") – it looks great and indulgent but without the guilt of the traditional, more health/weight conscious one!
