Vegan egg drop soup is made with plant-based ingredients and preserves all the character of the original version. The tender yuba sheets mimic the egg ribbons, and swim in a gingery savory soup that has a lovely bright yellow color. Recipe ➡︎

INGREDIENTS

Spice mix
2 tablespoons water
4 teaspoons cornstarch
1/4 teaspoon white pepper powder
1/4 teaspoon salt (or to taste)
1/8 teaspoon turmeric powder, for the yellow color (Optional)

Soup
4 cups water
3 green onions, thinly sliced, white and green parts separated
2 slices ginger
2 teaspoons mushroom powder
4 fresh yuba sheets or 1 semi-dried yuba sheet, cut into strips
2 teaspoons sesame oil

  1. mmmm-i guess i would have to order these yuba sheets online unless there is a secret hack to make them at home, as my grocer doesn't carry them and i live in a very small town w/ no asian market 🙁 this looks so so good though, it's like i can taste it already- i'm not vegan, but i enjoy all kinds of food and i think i would very much enjoy the texture of these noodles…thank you for sharing and i wish you much success with the book it looks stunning and i'm sure it's as clear, concise and visually enticing as the video series! yummy yummy yummy 😉 and theres just something about a physical book- everything all in one place, the pictures- it doesn't fade to black when you've not touched it in several moments- cause your um busy cookin er your hands are icky hahaha- all the details of the recipe w/o havin to scroll around and ya don't need anykind of sign or battery to use a book- ut then again- theres no catchy, jazzy theme music ta groove to either- bummer!!! take care g'nite
