Finally – Here’s the recipe for simple, tasty, easy and super quick to make vegan crêpes! Perfect for a vegan breakfast, brunch or dinner – why not 🙂
Ingredients:
180g spelt or all purpose flour ( 1 1/3 cup + 1 tbsp OR 6,3 oz)
2 tbsp corn starch
1 tsp baking powder (which I forgot to mention in the video!)
1/4 tsp salt
2 tbsp raw sugar
1/4 tsp vanilla
1 1/2 cups non dairy milk (375ml)
1 tsp apple cider vinegar
1 tsp coconut oil (for greasing the pan every once in a while)
Also fillings/toppings of your choice.

I just made this recipe and they were really good but I would recommend adding a little bit more liquid (just like a few tablespoons).

these type of pancakes are the "normal" pancakes here in Sweden. We call those fluffy small pancakes "American Pancakes" 😀
I made these savoury by adding a tiny bit more salt and a little pepper, but I don’t think they need too much else. I love putting vegan cheese, fried mushrooms and spinach on one side of the pancake as it’s cooking and then fold it over in half to encase the filling and cooking for another minute or so to melt the cheese and heat everything through. It’s soo good but there’s endless filling options: tomato, vegan cream cheese, peppers, courgettes, potato, vegan ham, sweetcorn etc.

I also added 1/3 of sparkling water as it does prevent the batter to be too dense.
Wow! these crepes are amazing! they taste really good and are quite healthy! of course it also depends on the toppings you add. I put raspberries and strawberries with a yoghurt and a lot of cinnamon. I also tried with applesauce it was delicious. Thank you for this recipe!

Putting stewed apple and cinnamon (or apple sauce) in pancakes/crepes is the best breakfast revelation I have ever had. Glad to know that you have discovered this too. 😉 Keep up the good work. Xx
