My mum used to make this all the time growing up! To veganise, I like to beef up a chicken style stock with onion, carrot, celery and tomato, and then drain and cook the rice in the stock. I use a can of chickpeas as my protein, but I keep the aquafaba and whisk it with lemon juice until i get peaks, spoon in some of the soup stock to temper, and then add it all back into the soup; I find this gives it a much more accurate texture to an OG avgolemono! No herbs, lots of salt and white pepper!

I have a Turkish friend who makes a soup very similar to this. The lemon addition is phenomenal. I’m not vegan so I’d top this with parmesan. Yum!

Im greek and I have my own veganized version of avgolemono and it is my favorite soup! Some things I noticed about your recipe that I find odd is the use of dill, and the use of orzo instead of arborio rice. Arborio is the traditional choice. And I've never seen avgolemono with dill. It should be greek oregano and black pepper. Also, I love the idea of adding tahini to the base. I do my base with blended white beans and olive oil to give the nice thickened texture. I'll have to add a little tahini next time too.

Looks like the lemon "chicken" orzo soup I make, except wiyhout the tahini… tahini really makes everything tastier, so im def adding it next time! The lemon is a must for this it adds so much goodness and brightness to the soup. I add soy curls for chicken…. I think this is what we're having for dinner tonight!
