Tuscan Soup! This week I have had a nonstop soup craving. A vegetarian version of tuscan soup full of white beans and fresh kale!! Absolutely delish and warming.
Tuscan Soup Recipe:
3 shallots chopped
2 tbsp olive oil
4 cloves garlic
3 carrots
3 celery stocks
1 pint veggie broth
1/4 tsp thyme
1/4 tsp oregano
Dash of hot chilis flakes
1 can of cannellini beans
Parmesan rinds and chunks (optional)
1 sprig rosemary
2 cups kale
Start by chopping all the veggies. Add oil, shallots and garlic to pan and sauté for 3 minutes. Add carrots and celery and cook for 5 more minutes. Add broth, beans, rosemary and seasoning. Add parmesan chunks and simmer for 15-20 minutes. Adjust salt and pepper to taste. Add kale and cook for 1 minute until wilted. Top with parmesan and enjoy!!
