Tuscan Soup aka Zuppa Toscana:
1 pound Italian Sausage (I’m using Turkey Sausage)
2 Slices of Thick Bacon, cubed
1 1/2 Cups Spinach or Kale (fresh is best,
stems removed and cut in ribbons )
2 Carrots, Shredded
4 cups Broth
2 Cups Water
1 Cup Heavy Cream
1 1/2 Tsp Red Pepper Flakes
1 Tsp Onion Powder
1 Tsp Garlic Powder
Salt and Pepper, to taste
2 Tsp Garlic, minced or paste
1 Tsp Herbs de Provence
1 Onion, sliced
4 Russet Potatoes, Sliced Thin
2 Tsp Fresh Parsley

Render bacon in pan to desired crispiness, remove to side plate. Remove any excess fat from pan. Add onions, cook until almost translucent, add sausage that has had casing removed and cook through. Add carrots, garlic, spices, breaking up sausage into smaller pieces as you incorporate the mix.
Add broth, and water, then add potato slices ( you’ll need enough liquid to cover potatoes well). Cook on medium heat until potatoes are fork tender. Add kale or spinach, cook for about 5 minutes and add the cream. Correct seasoning.
Serve with fresh Parmesan and top with crispy bacon and parsley.
