I love Thit Kho and couldn't figure out how to make this keto. I usually add boiled eggs while its braising. Its pierced with a fork to allow the sauce to seep in. Its my kids favorite. Also, if the sauce is really concentrated, I'll add shrimp instead of eggs and a chili pepper. I've learned to eat this over a salad of Thai basil, mint and lettuce instead of rice.
