The Crawfish Salad Roll.. but NO Crawfish… this is the BEST Vegan Sandwich I’ve ever made! ITs my new favorite thing and it’s something you need to make this summer at least once, but I’m sure you will make it more. I have a feeling this will end up at some pool parties and bbq’s this summer for sure!
Monica and I recently got back from Jazz Fest in New Orleans and 1 of the sandwiches I kept seeing was this crawfish salad roll… I wanted to make it out of mushrooms though, everyone kept raving about it. So here it is and WOW is it good!

P.S. I really screwed up these rolls… I’m not a baker and I know that. I never get good rolls. I get a lot of you that ask for fails, so here it is!

  1. Mushroom "salad":

    Preparation:

    2 pounds of button cap mushrooms (break up into bits incl stems)
    Put in pot with salt and roasted seaweed sheets, water to almost cover, high bring to boil, simmer til water is gone (30-40 minutes)
    Make remoulade sauce
    1 green onion chopped
    1.5 tbsp minced Italian parsley chopped
    2 stalks celery chopped
    2 cloves garlic minced
    lemon juice from one lemon
    1 tbsp horseradish (prepared)
    2 tbsp dijon mustard
    1.2 tbsp white wine vingear
    hot sauce to taste
    1/2 cup vegan mayo
    cayenne to taste
    cajun seasoning to taste

    Stir up and chill til mushrooms are done

    add evoo to mushrooms cook til done steaming

    Mix remoulade sauce and mushrooms and chill til cold

    use hotdog buns, put butter and toast

    top with green onions

  2. I do just want to point out that you called your Creole seasoning Cajun seasoning instead. The distinction is really important and refers to two different ethnic groups. Flavors and ingredients overlap a bit because of region, but theyte not identical because both groups brought flavors from their cultural heritage.

  3. I actually feel a lot better that your buns were a fail only because I love baking but breads are my mortal enemy, so it’s comforting to see that even someone as good as you has their down days 😉 They’d probably make good breadcrumbs though!! So not all is lost!
