This is NOT your average Potato Salad Ingredients:
Cajun Style Potato Salad
1 bag Potatoes of your choice
6 slices of Bacon, cooked and crumbled (2 tablespoons reserved for garnish)
3/4 cup of mayonaise
3 tablespoons sour cream
2 tablespoons of dill pickle juice
2 tablespoons yellow creole or yellow mustard
2 teaspoons Cajun seasoning
1 cup combined, green, yellow, orange and red bell peppers, diced
1 stalk celery diced
1/4 cup yellow onion diced
5 hard boiled egges, roughly chopped
1/4 cup green onions chopped for garnish
