This easy, low carb blackberry dumplings recipe will not spike blood sugar levels. In this video, I share with you an easy diabetic and prediabetic dessert the entire family will love. While many are used to making blackberry dumplings with bisquick, I make these with carbquik!

As a dietitian, I work with individuals to balance blood sugar levels, maintain hormone balance, and achieve weight loss! We do this by following low net carb, high lean protein, high fiber, and omega-3 fats! Often, I am questioned by clients, ‘Can I still eat my favorite foods?’ and more often ‘What can a prediabetic eat?’

All my prediabetics and diabetics miss their family favorite dessert recipes. Instead of eating gross sugar free candy, I made over this very common Louisiana based blackberry dumpling recipe into an amazing low carb diabetes dessert recipe.

Diabetic Blackberry Dumpling
1 ½ lbs frozen berry mix
1 tbsp 100% butter
½ cup water
⅓ cup Swerve
1 cup Carbquik
1 cup PLAIN Greek yogurt
2 tbsp water

Combine Carbquik and Greek yogurt in a bowl. Add 2 tbsp water. Combine and place to the side.
Place a large saucepan on the stove top. Add berries, butter, water, and Swerve to the pan.
Bring to a boil.
Drop Carbquik mixture by tablespoonfuls. Cover, set heat to medium-low, cook 15-20 minutes.
Serve.

  1. I noticed you use Carbquik in a lot of your recipes now. But it’s got gluten in it. Gluten carries with it a whole host of problems. Not just for celiac people, but everyone. Damages your intestinal villi, and reduces your villi capability to absorb nutrients. How do you substitute an alternative flour into these recipes, like almond flour?

  2. Shut the kitchen door, Shelly, you've done it again!! I'm salivating over that bubbly, sweet goodness! IF ONLY I could use the Carbquik [alas]. One day, I'm going to sit down with the ingredients list on the box and try to make a gluten free hack of it. Any suggestions? But for those who CAN partake of this, it will be heavenly, I'm sure!!
