  1. There are many ways to make a great pot of lentil soup. You could start with some pancetta or Italian sausage. Or make a completely vegetarian or vegan version. The choice is yours. I usually add the good extra virgin and lots of grated cheese for finishing. As I always say, "Make it your own!".
