The Best Roasted Tomato Basil Soup!


This vegan roasted tomato basil soup is Mediterranean Diet approved! Come in to my kitchen and let’s make this together! FULL RECIPE: 👉 SPICES AND GREEK OLIVE OILS: 👉 SUBSCRIBE TO THIS CHANNEL: INGREDIENTS ✅ 3 lb Roma tomatoes, halved ✅ 2 to 3 carrots, peeled and cut into small chunks ✅ Extra virgin olive oil (I used Greek Private Reserve olive oil) Salt and pepper 2 medium yellow onions, chopped 5 garlic cloves, minced ✅ 1 cup canned crushed tomatoes ✅ 2 oz fresh basil leaves 3 to 4 fresh thyme springs (2 tsp thyme leaves) ✅ 1 tsp dry oregano ✅ 1 / 2 tsp sweet paprika ✅ 1/2 tsp ground cumin ✅ 2 1/2 cups water ✅ Splash of lime juice, optional ✅ Grilled French baguette or crusty bread of choice for serving.





  1. So… I got excited when I saw this recipe but…. when I tasted it, I could taste the "can" from the canned tomatoes. I know I'm sensitive to anything in a can and can't stand coffee made in a metal percolator so why did I add canned tomatoes, San Marzano, top of the line to boot!!!!???? I'll try this again and maybe add some celery and a bit of cauliflower to round out the acidic taste. I just feel like it needs to be toned down or balanced out a bit. I did add a balsamic drizzle to my bowl which was an enhancement. Best thing ever was that I served it with a homemade sourdough rye bread that had chopped olives, dried tomatoes, and pickled red onions topped with lemon tahini sauce. It complimented it nicely. Thanks for inspiring me to try something new…. I'll keep working with this recipe. 🙂
