  1. Love onion in my meatloaf too. Looks good. I don't like catsup, but I agree that is the only time catsup is necessary. Your mason jar ice cream turned out great, so I think I can trust you on this too, so long as I don't forget the onion. Thanks Katherine.

Katherine, you can also use the idea of reg version of where you mix Brown Sugar, Mustard & ketchup ti your taste, and baste on top with a "basting brush"(lol)… but feel free to use keto swerve brown, keto friendly ketchup & mustard then spread across the meatloaf the last 10 mins. This is sooo much better than plain ketchup!
    Don't knock it until you give it a try. 😏

  3. Made this last night. Doubled. I didn't have green pepper. Went to get Worcestershire sauce at the store. Sold out! Weird! I subbed with A1. Followed the rest of the recipe. Fabulously delicious and moist! I will make again with missing ingredients next time. Seriously the best meatloaf I've had in years. This will be a staple in our house. Thanks for sharing!!

  4. I like onion in my meat loaf too. My mom always made her glaze with ketchup, brown sugar and mustard. I changed it up by putting 1/3 cup ketchup, 1/4 cup packed brown sugar, 1/4 cup pineapple preserves. Might not be Keto, but it is very good.

    For leftovers, I buy some whole wheat hoagie buns and put sliced white american cheese inside of the bun and some sliced meat loaf in and then drizzle some of the glaze over that. Heat that in the microwave for about 1 minute.
