FULL RECIPE FOR KETO BANANA BREAD:
KETO BANANA NUT BREAD RECIPE
1 ½ cups almond flour
2 scoops unflavored or vanilla Perfect Keto protein powder or 1/4 cup coconut flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 1/2 sticks of unsalted butter, softened
1/2 cup monk fruit or sweetener of choice
4 eggs
1 tablespoon banana extract flavoring
1/3 cup sour cream
1/2 cup chopped walnuts, divided
Preheat oven to 325 degrees. Spray two 3×6 inch loaf pans with cooking oil or line with parchment paper.
In a small bowl, sift together almond flour, protein powder or coconut flour, baking powder, cinnamon and salt. Set aside.
In a large bowl, cream butter until light and fluffy. Add monk fruit and mix together for several minutes until light in color and fluffy. Reserve ¼ cup of butter mixture for later.
Mix in eggs one at a time, stirring in between until combined. Add in banana extract and sour cream. Mix until combined.
Slowly add dry ingredients while mixing continuously.
Add ¼ cup chopped walnuts. Mix until fully combined.
Spoon batter into the loaf pans filling with batter to almost the top of the loaf pan (about 1/2 inch from the top) The batter won’t raise a whole lot.
Combine reserved butter with remaining 1/4 cup of chopped walnuts and spoon over the top of each loaf.
Bake at 325 degrees for 30-35 minutes or until set. Remove from the oven and let cool before serving.

Could I make them in a muffin tin? Could they be frozen? And for the butter sticks: i have a pack that has 4 tbsp of sticks each and one that has 8 tbsp each. Which one do I need to use whole sticks of?

By adding the coconut flour instead will it still give the same texture fluffy and moist ? Also you said 2 1/2 sticks of butter but it look like 1 1/2 stick to me. Is the measurement wrong or is it really 2 1/2 sticks (1 1/4 cup ) ? I'm confused.. There are different sizes of wrapped butters.

I made this on Saturday. I didn't have any walnuts, so I used freshly roasted pecans. I used just one loaf pan and missed a step, so I had to cook it for a longer amount of time (20 min more). I sliced it into 10 pieces, as it was very moist when I cut it and I didn't think it could be cut any thinner. I skipped the salt as I had salted butter. I always add a bit more of the sweetener for my taste. I forgot to use the extra 1/4 of a cup to preserve for the topping (probably why cake was more moist). I did add just the extra pecans on top. O.M.G!!!! This is the best cake I've made. The recipe is amazing. You can't tell that there's no banana in the cake. It looks, smells, and tastes like banana nut bread. I'm going to have it with low carb vanilla ice cream later 😋! Thanks for the amazing recipe.
Can you clarify what you mean by a stick of butter. 1 stick is a half a cup. But they also have sticks of butter that are smaller that are 1/4 cup of butter. I used the big sticks and I have banana bread soup. 🤷🏻♀️

You can make a loaf of banana bread with 1 and a half bananas split between at least 6 servings or up to 10. That can fit in keto macros.
