KETO BREAKFAST BOWL
Make about 10
2 pounds ground breakfast sausage or pork
1 teaspoon salt
1 teaspoon onion powder
1/2 teaspoon black pepper
1 red bell pepper
1 green bell pepper
1 medium onion
3 cloves garlic, minced
8 oz sharp cheddar cheese, grated
10 – 20 eggs
1️⃣ In a large skillet over medium high heat, add sausage. Break up and crumble. Let cool until almost cooked through. Then add in seasonings – salt, onion powder and pepper. Stir to combine. Continue cooking until sausage is browned and cooked through. Remove from the skillet into a large bowl and set aside.
2️⃣ While the sausage is cooking, dice red and green bell pepper, removing stems and seeds. Peel and dice onion. Set aside.
3️⃣ Return skillet that cooked the sausage back to the stovetop. Turn to medium high heat and add diced vegetables. Season with a pinch or two of salt and stir. Let cook, stirring occasionally until vegetables are tender.
4️⃣ Return cooked sausage back into the skillet with the sautéed vegetables. Stir to combine. Remove from heat.
5️⃣ Using a mason jar or meal prep container, add 1 – 1 1/2 cups of the sausage and vegetable mixture to each container. Evenly divide shredded cheddar cheese between all containers. Secure the lid and store in the refrigerator or freezer.
6️⃣ To the jar or container, crack in 1-2 eggs. Stir to combine. Microwave on high for 1 minute. Stir to distribute contents. Microwave for 45 more seconds or until egg is cooked. Enjoy!

Hmmm… I like the mason jar idea.. but I do not own a microwave ( yes… dinosaur )-
I think it would be placed in a pot with water and cook it in a bath that way… must try this! Thank you!

I usually cook my meat and peppers and store it all in one large container and pull from it when ready to cook with the eggs. I like this idea of individual containers also. 😊

Freezer is fine for glass jars. However you really walking the willd side putting them in the microwave. They are not mw approves and will more than likely explode.

Glass jars freeze perfectly fine. I freeze my homemade broth in mason jars.

That “nifty chopper” is a copy of an Alaskan ulu. The indigenous people of Alaska invented them and have used them for at least a century.
I might do this. I do like the little cups where u add an egg or two. But they’re higher in carbs than I prefer. This would be a good alternative.

I don't eat breakfast but that is also a great option for lunch and fast dinners. I am totally going to make some of that and see what I think of it. I might even add three eggs and make it more of a deconstructed omelet.
