#Thai Tom Yum Vegetarian Spicy Soup

Ingredients:

Lemon Grass 1 stick
Ginger/Galangal 1 inch
Lemon Leaves 3 or 4
Mushroom 3 to 4
Shallots 5
Broccoli 1/4 cup
Crrot 1/4 cup
Soy Sauce 1tbsp
Sugar 1/2 tsp
Cherry Tomatoes 5
Coconut Milk 2tbsp
Thai chilli paste 1tbsp
Spring Onion for Garnishing

Servings :2
Prep time:15 mins
Cooking time :30 mins

Method:

Boil 3 cups of water

Add Lemon grass,Ginger/Galangal and Lemon leaves. Boil the herbs for 5 mins

Add Mushrooms,carrots,Broccoli and other vegetables that you like.

Add sugar,soy sauce and boil for about 3 to 4 mins or until all the vegetables start to soften.

Add cherry tomatoes and let it get hot again.

Add Thai chilli paste.

Stir in the coconut milk. Turn off the heat.
