Thai curry dish is made from curry paste, coconut milk or water, vegetables or fruit, and herbs. I have used a storebought thai curry paste, coconut milk and some of my fav vegetables to prepare this easy Vegan flavorful recipe.

This Vegan Thai Curry tastes better than anything you’d get from a restaurant, and is totally customizable depending on what vegetables you have on hand. Ready in no time at all

Ingredients for Thai Vegan Curry Recipe

Stir Frying the Vegetables
Oil – 2 Tablespoons
Radish – 1
Bell Pepper – 1
Mushrooms – 100 Grams
Green Peas – Half Bowl
Salt – 1 Teaspoon
Black Pepper – 1 Teaspoon

Ingredients for making the Curry
Coconut milk – 8 Tablespoons
Thai Curry Paste – 3 Tablespoons
Tomato Paste – 1 Tablespoon
Coconut Milk – 150 ml
Soy Sauce – 1 Tablespoon
Sugar – 1 Tablespoon
Vegetables – Stir fried
Tofu – 100 Grams
Basil leaves
