  1. Bananas are high in histamine. With all the foods that bother you (anxiety is a big symptom too)…that may fit with Mast Cell Activation Syndrome…also COVID is KNOWN for flaring mast cells or starting Mast Cell Activation Syndrome (MCAS). Often the flare diminishes (if already had it) and return to about baseline. For some, MCAS causes GI issues, for other it does that and rashes and flushing. Anxiety or mood changes w/ eating foods that trigger the mast cells to respond…is not uncommon. Though generally the rule is high histamine (or histamine liberating foods…see foods can be high in histamine but we also generate it during digestion) foods worsen symptoms, different people tolerate different things…some cam tolerate chocolate and almonds…where another person couldn't. To see if MCAS is an issue for you, a Pepcid (20mg 2x a day is safe per OTC bottle…& my doc), Zyrtec or Claritin and Allegra regimen bringing symptom improvement is a sign. Quercetin (I prefer Now Food Quercetin with Bromelain) is a mast cell stabilizer & does so many good things…it gave me the most substantial improvement within 2 wks. Then Algonot's Fibroprotek is the best source of Luteolin…also a fantastic mast cell stabilizer. Dev by Dr. Theoharides at Tufts Univ…him & Dr. Lawrence Afrin & some others are mast cell gurus. Your doc could also proscribe Gastrochrom aka Cromolyn Sodium Oral…you dump 1-4 ampoules into water & drink 15-30 min before you eat & it calms the mast cells through GI tract so they don't go wild after eat. Also!…taking DAO enzyme (breaks down histamine) before meals is helpful…I prefer Seeking Health brand (Dr. Ben Lynch of Dirty Genes book & Strategene program). I see a doc that specializes in complex chronic illness & am plugged into a community of people w/ EDS & ME/CFS (this Long COVID but caused by EBV, the flu, etc), Fibromyalgia, Endometriosis, and MCAS is COMMON among us. Mast cells have implications in all these disorders and with causing chronic fatigue. Mast cells can pump out over 1000 mediators and pro-inflammatory substances. They can help heal, or hurt.

  2. God love ya, Lisa, but you really could benefit from a year or two of cooking classes where they start from the very beginning. This was a horrible recipe unless you're allergic to basically everything a human can ingest other than bananas. Real eggs, butter, and maybe some salt and sugar in them would have made them better. Much love!

  3. This is kinda how I feel every time I try something new lol. My boyfriend cooks. I bake. I don’t tread in his domain unless it’s like box mac and cheese 😂 but very relatable content. I just cannot make pancakes for the life of me. Every time, burnt, or stuck, or they taste bad. I just cannot. 🤷🏻‍♀️🤦🏻‍♀️ but thanks for making me feel less alone!

  5. Try adding a tiny bit of pure vanilla extract and some ground cinnamon! Just little tweeks like that can really amp up a plain and healthy pancake recipe! I went to culinary school and have tons of fun (and easy) suggestions. *BURNING IS LEARNING*
