Last night I decided to make this delicious cajun garlic butter chicken recipe with cauliflower rice for dinner. Ooouuu 😯 this was super easy and TASTY! You can find the ingredients and instructions below ⬇️.
• 2 boneless and skinless chicken breasts
• 3 tsp minced garlic
• 4 tablespoons butter, divided
• 1 bag cauliflower rice
• 1 yellow onion, chopped
• 3 tsp lemon juice
Cajun chicken dry rub mix
• 1 tsp cajun spice
• 1 tsp chili powder
• 1 tsp Red chili pepper flakes
• 1/4 cup pork rind crumbs
• 1 teaspoon Italian seasoning
0:00 – Intro
0:03 – Chop yellow onion and set it aside.
0:06 – Mix, cajun, chili powder, Italian seasoning, and pork rind crumbs in a medium mixing bowl.
0:15 – Coat 2 chicken breasts with the dry rub mix on boat sides. (This is easier when the chicken breasts are rinsed with water and dried off with a paper towel)
0:34 – Place butter in a medium to large-sized skillet and melt completely on medium-high heat.
0:41 – Cook the chicken on both sides until golden brown and cooked all the way through. It took me about 3-5 minutes on each side.
1:16 – Remove the chicken from the skillet.
1:18 – Add 2 tbsp of butter to the used pan and melt.
1:30 – Add the chopped onions and garlic and cook for about 1 minute mixing them frequently.
1:40 – Add your bag of cauliflower rice to the skillet and mix it together.
1:49 – Add lemon juice, chili flakes, and leftover dry rub mix to the skillet and mix all together.
2:04 – Add the chicken back to the skillet to warm everything back up.
BAM. There you go.. Cajun garlic butter chicken.
