When you’ve got some roasted squash it’s the perfect time to turn the rest into soup ! Here is the link for the video and recipe on roasting the squash:

Soup recipe:
Take your roasted, cooled, and peeled squash and add to pan
Add one can of coconut milk
Add one can of broth
Stir and let simmer for about 5-10 mins
Use an immersion blender to purée
Let simmer for 5 more mins and serve
( you can add brown sugar and salt to taste if desired )
