Veggie omelet loaf
Ingredient: 5 eggs 1/3 cup milk 1 medium potato, diced 1 handful spinach, chopped 1/2-3/4 cup grated carrot 1 medium bell pepper, diced 1/2 tsp baking powder salt and pepper 1/2 cup part skim shredded mozzarella or cheese of choice
Preheat oven to 400°F. Spray a loaf pan with nonstick spray. For addition nonstick and improved presentation, line the loaf pan with a sheet of parchment paper.
In a mixing bowl add all ingredients and whisk well. Pour into the loaf pan, top with cheese, and bake uncovered for 30 minutes, or until eggs have set.
serves 3-4 as part of a healthy breakfast. For @2bmindset : it has lots of protein and fiber, with lots of veggies as extra credit, so it’s a great way to stay the day.
These would also be cute to serve at a Mother’s Day or weekend brunch. You can cut them into bites with a tooth pick to serve, people will love it!
I should also note these are super inexpensive to make. Each serving is under $3 per serving at most, making it wonderful to make all the time and feed to your family as well.

In general, everything that is baked is very tasty. but I would eat vitamins B1 and B3 for appetite.

Things you should never do again:
Use a metal whisk in a metal pan- yikes.
Throw in raw potatoes into a firsts- they won’t cook all the way, and who wants bland unseasoned somewhat hard potatoes for breakfast.
Make a frittata in a loaf pan and call it an omlette loaf. Why?
Bake ur potatoes halfway done. Then put in the breakfast loaf.

I do the same thing, but on the stovetop in a pan with a lid.
How do you reheat them?
So it is a frittata. No such thing as an omelet loaf. Don't confuse people for the sake of marketing.
