Jalapeño and Sweet Corn Pasta Salad:

Bagel Pinwheels:
Makes 16 pinwheels

2 large carrots
1.5 cups baby spinach
1/4 thinly sliced red onion
1 lemon
fresh dill or chives
Everything But the Bagel seasoning (optional)
2 Lavash flatbreads (or 2-3 large tortillas)

Dill + Caper Vegan Cream Cheese
1 oz container of vegan cream cheese, softened to room temp
1 tsp dried dill
2-3 tbsp capers
1/4 tsp black pepper
salt to taste

Grate the carrots and add pinch of salt and 1.5 tbsp of lemon juice on top. Mix well and set aside.

In a mixing bowl combine all of the cream cheese ingredients and mix well.

To assemble, spread a thick layer of cream cheese on each lavash bread, making sure it reaches all the way to the edges.

Then sprinkle on the carrots, layer the spinach and onions on top and sprinkle with fresh dill and a squeeze of lemon juice.

Roll tightly into a log, slice into 8 thick slices and chill for at least an hour (optional) Serve with a sprinkle of everything but the bagel seasoning on top and enjoy!

  2. I’ve been craving pasta salad and I never would have thought of this combo! I think I actually have all the ingredients to make it also which I’m taking as a sign. 😄 It’s so funny that those are your new favorite snack because I literally ate a whole bag this weekend! 😆 They are addictive! They don’t taste like lentils at all and the light and crispy texture kinda reminds me of Munchos which I love. I don’t know if they still make this flavor because they don’t carry it at my store anymore, but they had a Margherita pizza flavor that was amazing-if you find it you should def try it!
