Sugar Free Rice Pudding Recipe | Bright Line Eating Breakfast Recipe – What could be better than a delicious rice pudding to start your day? Especially when it’s sugar free and requires just a few simple ingredients. This recipe is Bright Line Eating friendly and can even be made ahead for a quick grab and go breakfast.
4 oz cooked white rice
3 oz mashed banana
3 oz diced mango
1 cup soy milk
1/2 tsp vanilla extract
Cinnamon to taste
1. Add rice, fruit, and milk to pot and bring to boil over high heat.
2. Reduce heat and cover.
3. Cook at a low simmer, covered, stirring frequently to make sure the rice doesn’t stick to the bottom of the pot.
4. Once pudding begins to thicken remove cover and continue to simmer, stirring constantly until pudding is as thick as you’d like it
5. Add cinnamon and vanilla.
