Easy Fruity Nut Dessert Recipe: No-Bake Cottage Cheese Delight!
Ingredients:
✔️100g raisins
✔️100g dried apricots
✔️70g dried cranberries
✔️100g water
✔️20g instant gelatin
✔️100g roasted pistachios
✔️100g roasted almonds
✔️250g cottage cheese (we used 0.2% fat soft cottage cheese)
✔️150g sour cream or yogurt (we used 10% fat Greek yogurt)
Vanilla extract (optional)

Easy to follow steps:
🟨Rinse fruits with hot water and let them sit in the hot water for 15 minutes, then give them a gentle squeeze to remove excess water. Cut them into small pieces.
🟨 Pour the gelatin into a bowl with 100g of water and let it swell for about 10 minutes.
🟩Once the gelatin has swelled, you can melt it. Pop it into the microwave for just 30 seconds, or use a gentle water bath on the stovetop. Remember, we don’t want to boil it!
🟩Mix the cottage cheese with your choice of sour cream or yogurt. Add the melted gelatin into the mix and give it a good stir. If you have a blender or mixer, that works perfectly.
🟦Bring in the nuts and fruits. Add the cottage cheese-gelatin mixture to the roasted pistachios and almonds, along with the dried fruits. Give it another mix so everything’s nicely combined.
🟦Get ready to freeze your creation. Find an empty bottle, milk carton, or juice carton. Pour your dessert mixture in and pop it in the freezer for around 2 to 4 hours.
🟦Once it’s frozen solid, it’s time to enjoy! Cut your frozen dessert into pieces and savor the deliciousness.
