Three suggestions: (1) freeze your lemons as once thawed, you are able to extract nearly 100% of the juice; (2) before cutting, zest of the lemon for incorporation into the crust; (3) use xanthan gum, guar gum or rehydrated gelatin to stabilize the lemon curd filling for a smoother mouth-feel. It’s a simple step but crucial.
