This sugar free hot chocolate recipe is healthy and keto friendly. It’s a healthy Mexican hot chocolate recipe but it also brings in elements from Indian cuisine (turmeric) and French style hot chocolate (where the sweetener is caramelized). This is no sugar hot chocolate with cacao which gives it extra anti-inflammatory effects along with the turmeric. I recommend using full fat grass fed milk which will make it more keto friendly by helping keep you satiated with healthy fats. This is a a thick rich hot chocolate, much more like the Spanish chocolate drink (pronounced “chalk-o-LAtte”), so it’s best for sipping, not guzzling!

Ingredients for 2 servings
2T monk fruit
2T raw cacao powder
1.5C milk (any kind, but recommend full fat grass fed whole milk), close to or at room temperature
1t ground turmeric
1/2t ground cinnamon

Directions
1. In a small saucepan, heat the monk fruit over medium-low heat until it melts and just turns amber, without stirring; simply tilt the pan from time to time to encourage even caramelization. Monk fruit will not get as amber as regular sugar, so shortly after it’s melted will be sufficient. This should take a few minutes.
2. do not wait! Right away, carefully pour in the milk, add the cinnamon and turmeric, return to medium heat and bring to a simmer, stirring well to dissolve (it may take the crystallized sugar a minute or two to dissolve). Whisk in the cacao. Continue to whisk. Bring to a low simmer and cook, whisking continually without allowing the mixture to boil, until the hot chocolate is thickened and cacao is dissolved, 5 to 8 minutes longer (You can make this in advance; cool and gently reheat before serving).
3. Pour into cups and let rest 5 minutes. Serve with whipped cream if desired.
