Strawberry Pie Volume 3 Cookbook
No-Bake Cheesecake

1 GRAHAM CRACKER CRUST
1 CUP CUT STRAWBERRIES (CUBED, NOT MASHED)
8OZ BLOCK OF CREAM CHEESE (ROOM TEMP)
1/2 STICK BUTTER (ROOM TEMP)
3 TSP. STRAWBERRY GELATIN
1/4 CUP GRANULATED SUGAR
16 OZ. COOL WHIP TOPPING
1 CUP SLICED STRAWBERRIES FOR GARNISH

Cream butter and cream cheese together until nice and creamy. Add sugar and fluff. Add gelatin and mix well, then add 2 cups of cool whip topping. Fold in the cut strawberries, then place in graham cracker crust. Place 1 cup of sliced strawberries on top.

This pie must be refrigerated. It sets up well and can be served the next day. Do not smash the berries or your pie will become runny. Enjoy!

Simple Potato Salad Volume 2 Cookbook

6 MEDIUM RUSSET POTATOES (PEEL AND CUT INTO WALNUT SIZE HUNKS)
Boil on high for 10 minutes.
BOIL 3 EGGS (PLACE EGG IN BOILING WATER WITH SPOON)
Drain Potatoes and place in large bowl
ADD: 1 CUP MAYONNAISE (BLUE PLATE)
1/3 CUP SWEET PICKLE RELISH OR SWEET SALAD CUBES
3 TBSP. DEHYDRATED ONIONS (MCCORMICK)
1 TSP. YELLOW MUSTARD
1 TSP GRANULATED SUGAR
1/2 TSP PEPPER
1 TSP. SALT
CHOPPED BOILED EGGS (THREE)
Must refrigerate after 3 hours!
The dehydrated onions add an onion flavor without it being overpowering. Makes 8 servings.

  1. One of the very best potato salad recipes I've ever made is one called Cottage Potato Salad and it uses small curd cottage cheese mixed in with Hellman's mayonnaise. It also has sliced red potatoes, boiled egg, green onion, black olives, pickle relish, and salt/pepper. It's layered potato salad and is out of this world – search for that one online!

  2. I can't eat onions, I do use onion powder, chopped dill pickles, chopped pimentos. Sometimes I add a couple tablespoons of sour cream along with real mayonnaise, some mustard and paprika for some color. I add a couple shredded boiled eggs. I boil red potatoes with skin on. When done I take skins off and chop in bite size pieces
