Spinach Lentil Soup in instant pot. This vegetarian soup is quick, easy and takes 20 minutes to make.

Oil- 2 Tbsp.
Ginger- 1 Tbsp. (shredded)
Onion- 1 cup (finely diced)
Tomatoes- 1 cup (diced)
Salt- 1/2 tsp
Coriander Powder- 1 Tbsp.
Red Chili Powder- 1 tsp
Cumin Powder- 3/4 tsp
Yellow split pea lentil- 1/2 cup (soaked for 30 minutes)
Spinach- 4 cups
Coconut Milk (extra light)- 1 1/2 cups
Cilantro – 1/2 cup
Water- 1 cup
Potato wedges and cilantro- for garnishing.
