This Southern Style Potato Salad is creamy, tangy, and delicious! It’s the perfect recipe for any get-togethers. Yes, you can bring the potato salad 🙂
Ingredients for this recipe:
► 2 lbs Yukon Gold Potatoes about 4 potatoes, peeled and chopped into 1-inch chunks
► 3/4 cup of mayonnaise
► 2 Tbsp of yellow mustard
► 2 Tbsp dill relish
► 2 tsp honey
► ½ a sweet onion diced (about ½ cup)
► ½ a red bell pepper diced (about ½ cup)
► 1 celery stalk diced (about ½ cup)
► 2 boiled eggs chopped
► Salt and pepper to taste
► Paprika to sprinkle on top for garnish optional

great to see different regional styles of tato salad. Here in Newfoundland its very different but the same. Its a cheap easy to make side always. Our veg varies, but we use a can of peas n carrots, and some diced onion.
No honey needed if you just use Indian relish.
II make mine like this but use a little sour cream instead of all the mayo….& sometimes add Italian dressing while my potatoes cool…adds a nice touch to them.

Your dressing is so different from mine! I use mayonnaise and mustard, but I used Italian salad dressing to make it thinner and spicer. Of course the onion and celery and eggs—but never the bell pepper. I will certainly try the pepper on my next batch! Your recipe looks great. Thanks for sharing.

How colorful! Definitely want to try this recipe as I am a potato salad fanatic! Lol! 😀 I have a quick/easy way to dice hard boiled eggs. I use my egg slicer: place the egg in the slicer as usual, then lift the sliced egg, open the slicer then place the egg back in turned 90 degrees, slice again and you have a diced egg. 🙂
